Zack Ottesen is the creative force behind the bar program at FIVE.

Originally studying economics to attend law school, Zack quickly found his passion in hospitality and bartending. Over the last decade, Zack has accumulated a vast cocktail knowledge while working for some of the best in the industry in Los Angeles and Seattle; studying complex age-old traditions like clarifying, fat washing and infusing vibrant, herbaceous flavors to add into his innovative drinks. With his broad grasp of mixology, Zack has fused diverse cocktail concepts to create the bar menu at Five Fusion.

Zack’s philosophy is rooted in working with the freshest seasonal ingredients, a defining characteristic of Japanese traditional mixology and its strong connection to seasonal flavors.  Working in a Japanese inspired bar, Zack’s commitment to honing the art form of cocktail making, elevates his overall bar menu and celebrates the precision and elegance that Japanese cuisine & culture is known for.
